enzyme

One of a class of biological catalysts that is composed principally of a globular protein of one or more polypeptide chains. In some cases enzymes include covalently bound or tightly associated metal ions, prosthetic groups or carbohydrates; they range in molecular mass from around 10000 to several hundred thousand Da.
